At the kitchen I look for a balance between traditional and current techniques.

I don't despise fusion cuisine or the cuisines of the world, which bring us wealth and which are well present on the stove at home. But in a moment of bursting fashions from outside, I also claim the cooking of our grandparents, adapted to the modern restoration techniques of the well known Hofmann school.

There is saying that what you look for in the market is what you will find on your plate. I always work with top quality and local products whenever possible.
